Grapes: Ciliegiolo 100%
This wine is made with a good selection of ciliegiolo grapes coming from an old vineyard aged approximately 40 years, managed since 1994 with the organic agriculture method. The vineyard is placed in front of Pitigliano in Maremma,; in its 3,5 hectares, there are about 8500 old plants, grown in a guyot with a density of 2500 plants; a part is being re-planted, with a density of 4800 plants per hectare.
The plantation faces the South East/North West, on sub-acid and tuffaceous semi-mixed ground. The harvesting and the selection of the grapes is manual, and the fermentation takes place, without addition of yeasts, at controlled temperature. The maceration lasts from 15 to 20 days. Wine matures for 18/24 months in barrique. San Lorenzo is sold after 12 months of bottle refinement.

Ruby deep colour, it denotes an important extract. Cherries dominate the fragrance, along with black currants, white pepper and cloves, which are also part of the flavour. The bouquet is elegant, balanced and persistent; not a strong wine, but very fresh and easily drinkable.
